When it comes to caviar, Israel isn’t the first place that comes to mind, but that’s what makes the story behind a carat of caviar even more fascinating.

This is a story about passion, innovation and entrepreneurship, which originates from our farm in the Upper Galilee. Through our unique agricultural facilities and thanks to the use of pure spring water and advanced technology for the meticulous and high-quality production of the coveted delicacy.

Karat Caviar’s aquaculture startup was launched in 1992, when our team members, which included entrepreneurs and aquaculture professionals, imported Osetra sturgeon fry (Acipenser Gueldenstaedti) straight from the Caspian Sea, to a farm in Kibbutz Dan.

Osetra is one of the rarest sturgeon species, and the source of the best quality caviar in the world. The cold and clean snowmelt water that flows from the Dan spring provided ideal conditions for growing sturgeon and the farm’s ecological conservation experts even managed to improve the growing conditions even more.
